Shirataki Noodles with Almond Butter Sauce

Fixings:

¼ cup green onions

2 tbsps. sesame seeds

2 tbsps. filtered water

1 package (8 oz.) fettuccine shirataki noodles

6 tbsps. coconut aminos

1 cup chopped tomatoes

2 tbsps. almond butter

½ red pepper

1 tbsp. vinegar

½ cup peas

2 cups broccoli florets

2 cups carrots

2 tbsps. coconut oil

Preparation method:

Have the coconut oil in a large pan over moderate flame.

Sauté the broccoli, tomatoes, carrots, onions, red pepper, and peas for 8 to 12 minutes, or until soft.

Combine the coconut aminos, almond butter, and vinegar in a small dish.

Toss the shirataki noodles with the amino mixture in the pan and stir to combine.

Top with green scallions and sesame seeds, then serve.
